Culinary Diversity

Earlier this week we heard a recipe for oven bar-b-q ribs on TV. Jerry thought she would try it. We bought baby back pork ribs that she marinated with a mustard mixture and then prepared a dry rub before baking in the oven. They were superb. The meat almost fell off the bone and the flavor was great.

Jerry and I ate two thirds of the recipe and when Alan came in he and Sue Ellen finished off the other third. I hear that SE didn't get much!

When we were shopping for the ribs I bought a bag of chicken leg quarters. I like to boil these when the weather is cold and I am stuck in the house. After boning the chicken I boil the bones with some potatoes, carrots, onions and assorted seasoning to make broth. I used the chicken meat and broth to make a pot of chicken and dressing using Great's recipe (almost). Even though I forgot the salt the resulting product was pretty good in my own opinion.

Sorry that I don't have any pictures of this week's activities. I was too busy eating to take pictures!

Banana Harvest

Do you know what this is?

It looks a lot like a banana you would find in the grocery store but it is a little shorter and fatter. I think it is probably a plantain. It grew on those tropical plants that we call "banana trees" outside our kitchen window. Here it is beside a "regular" banana.

I searched for plantain recipes and found that they need to be cooked. They can be eaten while still green in color, while yellow and after they turn black. They are sweeter after turning black. This one is almost black so I think I may try one of the desert recipes that I found. Watch for a report later.
